Cook Sardinian pasta according to package directions.
While cooking pasta heat olive oil in sauté pan over medium heat. Brush mushrooms to clean, discard any “wild heritage” and trim off any tough or discolored areas.
Chop or slice medium and add to sauté pan. Sauté until tender 5-10 minutes depending on mushroom selected. Sprinkle with a nice sea salt such as Maldon and a nice grind of pepper.
Put Sardinian pasta on platter and mound sautéed mushrooms on top. Simple. Delicious. Good ingredients can stand alone without heavy sauces or seasoning. ( but a little fresh parmesan would be delicious here as well)
