They use only family-raised citrus and mission olives which are then pressed together. They are also free of lead which is sometimes found in imported oils. These olive oils are pressed at the peak of freshness for superb flavor. The dark bottle is a built-in protector from harmful light so keep within easy reach. Keep, as with all good oils, out of direct sunlight. There is no need to refrigerate and it will only serve to cloud and thicken your oil. This won't hurt the oil but will make it less appealing. This is fabulous on just about anything. Needless to say it is wonderful on a salad of fresh greens and veggies. But don't stop there. It is absolutely divine on avocado. Either solo or your favorite avocado toast. Th lime flavor is crisp and refreshing and a bit different. Bring out a Caribbean flair to to a nice fresh fish filet drizzled with Tahitian lime olive oil and fresh fruit for contrast.( mango is a great complement for both the fish and the lime) It also divine drizzled on fresh scallop ceviche.
